The APV Innovation Center in Silkeborg, Denmark, operates a UHT pilot plant capable of running all of the main UHT system configurations. The main purpose of heat treatment is to reduce the amount of viable bacteria and spores. Heat treatment can range from a mild pasteurization to a full sterilization, depending upon product type and the stage in the manufacturing process. Selecting the right heat treatment depends on careful evaluation of the balance between high bacteriological standards and low destruction of valuable nutrients. Research has shown that an excessive heat treatment process should provide fast heating, short and precise holding time at maximum temperature and fast cooling.
